Bubble waffle

Gai daan jai, "little eggs", first appeared on Hong Kong street stalls in the 1950s. The batter is baked in a pan with round cells, so every waffle is crisp outside and soft inside, with bubbles you break off one by one. We bake each one to order and roll it into a cone with ice cream and syrup.
